Soul Food Christmas Recipes

Soul food has become popular across America and beyond-it dates back to the slaves and is most common in the deep south of America. Many of the recipes come from around New Orleans and the Mississippi. A lot of soul food recipes are handed down through the generations-soul food Christmas recipes are no exception. At Christmas time those who prepare soul food Christmas recipes are in for a lot of work-the families and friend who eat soul food Christmas recipes are in for a treat.

Food is high on the agenda of everyone who lives in the deep South and cook ins and neighbors taking food to each other’s houses are no exception. Soul food Christmas recipes sometimes include Gumbo-a sort of fish and meat stew with Cajun seasoning; when times are hard the recipe is sometimes made with chicken feet. Soul food Christmas recipes for gumbo are extra rich because it is celebration time. On Christmas day gumbo is served as a starter in many homes with leftovers being kept for late night snacks. One such recipe is called Elsie’s Gumbo and is made from lots of different sea food, chicken, sausages and all sorts of spices. Gumbo is cooked for a long time so that all the flavors blend together. It is made over the course of two or three days and can serve a large number of people.

On day one soup bones, red and green peppers, celery onions and bayleaves are placed in a pot of seasoned water. The mixture is brought to the boil and then allowed to simmer till the meat falls from the bones-the bones are removed and the fat skimmed off the top while the soup is left to stand. The next day the stockpot is reheated and thickened with a roux made from flour and oil then the second set of ingredients are added. These can be a wide range of seafood, a whole jointed chicken, okra and frozen Cajun vegetables, three pounds of sausages, gumbo file, chilli and thyme. It is then cooked until tender and served with rice.

After the gumbo there might be baked goose or chicken and homemade cornbread sometimes with a dressing. It is also common to have a salad and maybe a loin of pork. These are also served with candied sweet potatoes, made with sweet potatoes, margarine, cinnamon, sugar, orange rind and vanilla cooked up together until the chopped potatoes are tender. Another favorite is collared greens, which are greens cooked with salt pork. Soul food Christmas recipes also include instructions for puddings such as lemon pie.
